Grandma Ethel's Cherry Cheesecake

Mother made this for nearly every special occasion. It was especially loved by the menfolk. True, it's not gourmet, but it is definitely a dessert packed with a lot of memories. Just thinking about it makes me homesick:) Think I'll whip it up for Sunday dinner.

1 9 inch graham cracker pie crust (sometimes Mom made her own)
8 oz package cream cheese, softened
1 15 oz. can sweetened condensed milk
1/3 cup lemon juice
1 tsp. vanilla
1 can cherry pie filling

Soften cheese to room temperature. Whip until fluffy and gradually add condensed milk. Continue beating until smooth. Add lemon juice and vanilla. Blend and pour into crust. Top with pie filling.

Quiche without a crust or Faux Quiche

9 eggs
½ cup flour
4 cups cheese
5 thinly sliced ham slices (chopped)
4 oz can diced green chilies (optional but yummy)
1 bunch green onions (chopped)
16 oz tub cottage cheese

Beat eggs. Add flour gradually. Add cheese, ham, chilies, green onions, and cottage cheese. Mix well. Pour into lightly greased 9x13 pan. Cover with foil. Bake covered at 350 for 45 minutes. Uncover bake 45 minutes more or until firm.
